Maple Pumpkin Granola Recipe

Hi Friends! My little sister is guest posting her maple pumpkin granola recipe on my blog today. Now, I want to start by saying that she is an amazing baker and I’m not-lol. So this recipe is delicious, I made it for myself. I stored it in a jar-It can also be a great gift to give to friends, family and even that new neighbor down the street. I added a video for some step by step instructions. With that being said, lets get to making some granola!

Its delicious over greek yogurt with seasonal fruit- My two year old even loves it!

Hi Everyone! I’m happy to be sharing my revised maple pumpkin granola with you today. It’s so good my two year old loves it! Some ingredients you can change to your liking- we added more maple syrup for extra sweetness.

Maple pumpkin granola

1/4 cup coconut oil
1/4 cup maple syrup
1/2 cup pumpkin puree
3 cups old fashioned rolled oats
1/4 cup of your favorite nuts!
1/4 cup of craisins (dried fruit of your choice)
2 teaspoons pumpkin pie spice
1 teaspoon fine sea salt or 1/2 teaspoon

reheat oven to 325 degrees F, and line a baking sheet with parchment paper or a silicone baking mat.

Combine coconut oil and maple syrup in a large microwave-safe bowl. Microwave for 30-60 seconds, then add pumpkin puree and stir to combine.

Add oats, nut mixture, pumpkin pie spice, and salt to the bowl. Stir well to mix everything evenly.

Spread mixture in an even layer on the baking sheet and bake for 35-40 minutes. Remove from the oven and cool for at least 15 minutes. (Granola will be soft when first removed from the oven, then get crunchy as it cools.)
